These highly flavoured dishes using aromatic roasted spices originated in Northern India and Afghanistan - brought to other parts of India by wandering market traders and quickly adopted by the gastronomic experts due to its unique blend of flavour and aroma.
- Lite bites sandwiches
All the following are served with naan bread, salad and sauce.
- Persian dishes
Dansak and pathia dishes. An originally Persian dish now common in Bombay. The chicken, prawn, lamb are cooked with lentils to a lightly sweet and sour taste. Served with pilau rice.
- Biryani dishes
Flavoured with saffron and aromatic spices, our delicious biryani is baked with basmati rice, seasoned with spices between layers of either meat or vegetable and served with a vegetable sauce.
- Jaipur dishes
The preparation of food was a very complex matter in the Royal Kitchens of Jaipur and was raised to the levels of an art form. Thus the `Khansama` (the royal cooks) worked in the statley palaces and kept their most enigmatic recipes to themselves. These dishes below are cooked in Jaipur Special Sauce being fairly hot, with onions, green pepper, tomatoes and corriander.
